So Instagram saw a bowl full of gourmet slop on my profile the other day. I promised a recipe, so here it is.
This was inspired by general instructions of a fit mama I follow online, but I experimented and came up with more specific instructions for a recipe. Feeds 2-3 people. Feel free to adjust measurements as needed.
2 zucchini, peeled and shredded
4 carrots, shredded
4 or 5 cooked chicken breasts or thighs, shredded
1 large avocado
Juice of 1 large lemon
1 tsp chili powder (approx.) or sprinkle finished dish with mild hot sauce
Sea salt to taste
Prepare and set aside cooked and shredded chicken.
Combine shredded zucchini and carrots in frying pan. Lightly saute in olive oil over medium heat. Remove veggies from heat.
Combine chicken and sauteed veggies in large bowl. Mash and mix avocado into mixture. Add salt, lemon juice,
and chili powder (or hot sauce) to taste. Mix well.
Serve over rice or eat plain. For breakfast, serve over eggs (broken yolk, fully cooked). I’m sure it would be great in an omelet too.
